Glycerol monostearate

"Glycerol Monostearate", popularly known as GMS is an emulsifier compound. Extensively used at home and commercially, this food additive is used in small quantities to emulsify fat. As the name suggests, it is a stearic acid compound formed by replacing one carbon link in the glycerol by a single stearic acid atom. GMS is largely used in baking preparations to add "body" to the food. It is responsible to give the Ice-cream its smooth texture. Simply said, it prevents "caking" of the food item (Anti-caking agent).Although useful, over-ingestion of GMS may lead to serious health conditions like bloating, diarrhoea, colon-cancer etc.
