Stoemp

Stoemp is a dish in the cuisine of Belgium and the Netherlands. It consists of pureed or mashed potatoes, other root vegetables and can also include cream, bacon, herbs or spices.

The name of the dish sometimes includes the kind of vegetables inside it, for example wortelstoemp (wortel= carrot).

Pronunciation

Stoemp is pronounced "chstummp" (IPA| [ʃtump] ). It is a typical word of the patois of Brussels, in which, as in standard Dutch, "oe" is pronounced like "oo" in hook.

The stoemp is a popular dish, rural simple and in general well appreciated.

It is based on mashed potatoes and one or more other vegetable like onions, carrots, leeks, spinach, green peas or cabbage, seasoned with thyme and laurel.

It goes traditionally with fried boudin, grilled bacon or fried eggs – in some family, it is served with an entrecôte or a horse tenderloin.
