Loukaniko

Loukaniko (λουκάνικο) or locanico is simply the normal Greek word for pork sausage, usually somewhat dried.

There is a variety of sausages in Greek cooking, but perhaps the best-known is flavored with fennel seeds and orange peel, sometimes smoked; another popular flavoring is greens, especially leeks.

Loukaniko is often served as a mezze, sliced and fried, sometimes with saganaki. It is also cooked into a variety of dishes.

The name 'loukaniko' comes from Latin "lucanicum" 'of Lucania', [Γ. Μπαμπινιώτης, Λεξικό της Νέας Ελληνικής Γλώσσας", 1998] and has been used in Greek since at least the 4th century. [Andrew Dalby, "Siren Feasts", 1996, p. 181] Similar sausages are known throughout the Mediterranean; dried, spicy Lucania sausages were widely exported.
