Burger King products

When the international fast food restaurant chain Burger King first opened in Miami, Florida in 1954, its menu consisted predominantly of hamburgers, french fries, soft drinks, milkshakes and desserts. Beginning with the the Whopper sandwich in 1957, BK has expanded the breadth of its menu by adding various non-beef items like chicken, fish and vegetarian offerings such as salads and meatless sandwiches] ; a breakfast menu; and non-soft drink beverages such as Icees, juices and bottled waters. Additionally, as the company expanded both inside and outside the US, it introduced localized versions of its products that conform to regional tastes and cultural or religious beliefs. To generate additional sales, BK will occasionally introduce limited time offers (LTO) of special versions of its products or bring out completely new products intended for either long or short term sales. Not all of these products and services have been successful; in 1993, Burger King introduced limited table service and special dinner platters, but this concept failed to generate interest and was discontinued.cite web |url=http://select.nytimes.com/gst/abstract.html?res=F50F14F83E550C7B8EDDA10894DF494D81 |title=As Business Gets Lean, a Big King Dares Big Mac |author=Glenn Collins |work = The New York Times |date=1997-08-28 |accessdate=2007-08-21 ]

As with other fast food companies, BK has recently begun introducing products that feature higher quality ingredients like whole chicken breast, natural cheeses such as cheddar and pepper jack, and other menu fair that attempts to appeal to the more adult palate and demographic. Again, not all of these products have met corporate sales expectations.cite news |url=http://www.usatoday.com/money/industries/food/2004-03-21-burgerking_x.htm |title=Burger King zaps menu, image |author=Bruce Horovitz |publisher=USA Today |date=2004-03-22 |accessdate=2007-09-26 ]

History

When the company began, its menu consisted predominantly of hamburgers, french fries, soft drinks, and desserts. In 1957, BK added its signature item, the Whopper. This quarter-pound hamburger was created by Burger King founders James McLamore and David Edgerton as a way to differentiate BK from other burger outlets at the time.cite web |url=http://bizjournals.bison.com/press/pr2-28-02bk.html |title=Burger King Celebrates As The Whopper Turns 45 |author=BKC press release |publisher=BizJournals on Bison.com |date=2002-02-08 |accessdate=2007-10-22] The sandwich became famous enough that BK eventually adopted the motto "Home of the Whopper."

In 1973, the company initiated a system to increase service times by creating two separate queues in the busiest restaurants: one line was labeled "Have it your way" that served customer "special orders" and the other was labeled "Have it our way" with "standard items, the latter option being the faster line. Have It your Way is still the company motto and practice, but when products are ordered they will be served the "standard" way akin to the Have It Our Way tag line unless the customer requests it Their Way.Fact|date=April 2007 It was around this time that BK transitioned from a fresh beef patty to a frozen patty.

One of Donald N. Smith's first changes to the menu was the addition of the Burger King Specialty sandwich line in 1979, which significantly expanded the breadth of the BK menu with many non-hamburger sandwiches including new chicken and fish offerings. The new specialty sandwich line was one of the first attempts to target a specific demographic, in this case adults 18–34, members of which would be willing spend more on a higher quality product.cite book |title=Fast Food: Roadside Restaurants in the Automobile Age |author=John A. page=119 |quote=To appeal to the growing adult market, "Specialty Sandwiches" were introduced, including chicken, fish and ham and cheese.
] One of Smith's other significant contribution to the menu was the addition of a breakfast product line, which until this time was not a market Burger King had entered. Besides the addition of the Croissan'Wich in 1983, the breakfast menu remained almost identical to the McDonald's offerings until a menu revamp in 1985.cite web |url=http://www.answers.com/topic/burger-king |title=History of Burger King Corporation |author= [http://www.fundinguniverse.com FundingUniverse.com] |publisher=Answers.com |accessdate=2007-10-24] This expansion introduced BK's A.M. Express product line which added new products such as French toast sticks and Mini-muffins. It was at this time that BK also introduced its chicken snack food, BK Chicken Tenders as well as its sibling product Fish Tenders. Like other fast food outlets, BK has also modified its core menu with variants on its sandwiches, limited time offer (LTO) products and items that cater to specific dietary needs. BK has also modified some of its core menu products, adding variations on products like the Whopper so that there are many "standard" sizes and varieties.

As the company expanded both inside and outside the US, it introduced localized versions of its products that conform to regional tastes and cultural or religious beliefs. International variations add ingredients such as teriyaki or beetroot and fried egg to the Whopper, [cite web |url=http://www.worldsgreatesthamburgers.com/index/content/id/8 |title=the History of Burgers |publisher= [http://www.worldsgreatesthamburgers.com worldsgreatesthamburgers.com] |accessdate=2008-03-28 |quote=The Hungry Jacks "Aussie Burger" has tomato, lettuce, onion, cheese, bacon, beetroot, egg, ketchup and a meat patty.] beer in Germany, Italy and Spain, and halal or kosher products in the middle East and Israel.cite web |url=http://www.allbusiness.com/wholesale-trade/merchant-wholesalers-nondurable/621140-1.html |title=The Kosher Whopper Boosts Burger Sales in Israel. |publisher=AllBusinees.com |date=2000-07-01 |accessdate=2007-10-01 ] To generate additional sales, BK will occasionally introduce limited time offers that are versions of its core products or new products intended for either long or short term sales. Items such as the Texas Double Whopper and various sandwiches made with mushrooms and Swiss cheese have been rotated in and out of its menu for several years while products such as its 1993 offering, a Meatloaf Specialty Sandwich and limited table service along with special dinner platters, failed to generate interest and were discontinued.

Burger King launched their new french fry line in 1997, which featured a clear coating made from a potato-based starch to 7,400 U.S. locations. Burger King also rolled out a large U.S. advertising campaign to advertise the new french fries. The fries were in research and development for over two years and already had been available in several markets. These new french fries are still in use. In order to appeal to as many demographic groups as possible and better compete with its fast food competitor Wendy's, Burger King added a value menu in 1998 with items priced at 99¢ (USD). [cite web |url=http://pqasb.pqarchiver.com/prnewswire/access/27375113.html?dids=27375113:27375113&FMT=ABS&FMTS=ABS:FT&date=Mar+16%2C+1998&author=&pub=PR+Newswire&desc=Burger+King+Debuts+New+99+Cent+'Great+Tastes'+Menu&pqatl=google |title=Burger King Debuts New 99¢ 'Great Tastes' Menu |author=AP Wire |publisher=The Kansas City Star |date=1998-03-17 |accessdate=2007-10-09 ] This value menu featured seven products: Whopper Jr., five-piece Chicken Tenders, a bacon cheeseburger, medium sized french fries, medium soft drink, medium onion rings and small shake. In 2002 and 2006, BK revamped its value menu adding and removing several different products such as chili and its Rodeo Cheeseburger. [cite web |url=http://www.bizjournals.com/southflorida/stories/2002/09/09/daily63.html |title=Burger King promotes new menu |publisher=South Florida Business Journal |date=2002-09-12 |accessdate=2007-10-09 ] Many of these items have since been discontinued, modified or relegated to a regional menu option.cite web |url=http://www.bk.com/Nutrition/PDFs/regional_menu.pdf |format=PDF| title=US Regional Menu Nutritional Brochure |author=BK publication |publisher=Burger King Holdings |date=July 2007 |accessdate=2007-10-24]

To better appeal to a more adult palate and demographic, BK introduced several new products to its menu in 2003, including several new or revamped chicken products, a new salad line and its BK Joe brand of coffee. Some of the new products, including its Enormous Omelet Sandwich line and the BK Stacker line, brought negative attention due the large portion size, amounts of unhealthy fats and trans-fats.cite web |url=http://www.komoradio.com/news/archive/4191016.html |title=Burger King Launches Line Of Jumbo High-Rise Burgers |author=Herb Weisbaum |publisher=KOMO Radio (Seattle, WA) |date=2006-07-06 |accessdate=2007-10-24] cite web |url=http://www.usatoday.com/money/industries/food/2005-03-27-burger-king_x.htm | title=Burger King to offer whopper of a breakfast sandwich |author=Bruce Horovitz |publisher=USA TODAY |date=2005-05-03 |accessdate=2007-10-24] cite web |url=http://www.spokesmanreview.com/blogs/healthbeat/archive.asp?postID=761 |title=Word of the day: Meat'Normous |publisher=the Spokesman Review (Spokane, WA) |author=Heather Lalley |date=2005-09-06 |accessdate=2007-09-01] Many of these products feature higher quality ingredients like whole chicken breast, Angus beef, natural cheeses such as cheddar and pepper jack, and other menu fare. Regionalization

The Burger King worldwide menus are similar to that of the United States; Major products like the Whopper and the Original Chicken Sandwich are constant across the globe. Even so, there are some variations due to differing tastes and cultural issues, including:

* In predominantly Islamic countries like the UAE, pork is not served due to Muslim dietary laws. Additionally, in the Muslim countries meat is slaughtered in the halal method and labeled as such.cite web |url=http://www.halaljournal.com/artman/publish_php/article_894.php |title=Prima-Agri to Produce Halal Beef for Regional Fast Food Chains |publisher=The Halal Journal |date=200-10-10 |accessdate=2007-10-01] [cite web |url=http://www.zawya.com/story.cfm/sidZAWYA20040802080316 |title=Burger King UAE launches the king of all burgers across the UAE |author=Press release |publisher=Zawya.com |date=2004-05-02 |accessdate=2007-10-01] Like McDonald's, the hamburger is called either a burger or a beefburger; this avoids using the syllable "ham" and its association with pork.

* In Israel, kosher dietary laws forbid the mixture of meat and dairy products; because of this, cheeseburgers are not popular. Many BK's in Israel are fully kosher.

* In many international markets, BK will offer products or condiments that fit the local taste. For example in Canada, BK offers poutine gravy and vinegar for its french fries and peri-peri sauce is available as a sandwich topping in the UK. Hungry Jack's offers the Aussie burger with fried egg, beetroot and other Australian flavors.

* In Asian markets, dark meat chicken is preferred over the white meat and products sold in these markets often are advertised as such. [cite web |url=http://www.burgerking.dachan.com/menu01.htm |title=BK Taiwan menu |quote=Menu features chicken thigh meat sandwiches |accessdate=2007-10-27] [cite web |url=http://knowledge.emory.edu/article.cfm?articleid=1097 |title=Burger King CEO John Chidsey on Innovation, Trust, and "The King" |author=Knowledge@Emory |publisher=Emory University |date=2007-11-27 |accessdate=2008-03-01 |quote=When ordering chicken in China, take note. The Chinese prefer dark meat chicken, not white. "We definitely have to be cognizant of the local market and provide what the local market wants", he [John Chidsey, CEO of BK] says.] Additionally, pies sold in Asian countries are fried, turnover-style instead of the deep-dish tart-type associated with American sweet-filled pies. Preparation methods

Cooking methods

Burger King prepares its foods in one of four ways: broiling, deep frying, baking or microwaving. As per its mottos and advertisements, BK cooks its burgers and grilled chicken on an automated grill, ["Earl, Employee of the Month" advertisement by Crispin Porter + Bogusky, 2006] while its other chicken products, fish, sides and breakfast sausage are deep fried in vegetable oil.cite web |url=http://www.bk.com/Nutrition/PDFs/ingredients.pdf |title=Burger King Product Ingredients List |author=BKC publication |publisher=Burger King Holdings |date=October 2007 |accessdate=2007-10-27 |format=PDF] BK prepares its eggs, biscuits, Cini-Minis and cookies by baking in a convection oven and microwaves its BK Veggie (US) burger patty. [cite web |url=http://www.prnewswire.com/cgi-bin/stories.pl?ACCT=104&STORY=/www/story/04-27-1998/0000640356&EDATE= |title=Burger King Introduces New Veggie Burger Featuring Morningstar Farms |author=BKC press release |publisher=PR Newswire |date=1998-04-27 |accessdate=2007-10-27]

andwich preparation

During periods of high volume sales, BK will pre-prepare high demand items such as hamburgers and cheeseburgers; during "slower" periods all sandwiches are made to order. The Whopper sandwiches, Angus burgers, TenderGrill and TenderCrisp chicken sandwiches and BK Veggies are all made only when ordered. [cite web |url=http://www.polkonline.com/stories/041599/sta_bking.shtml |title=Burger King hopes changes will expand appeal |author=Rachel La Corte |publisher=Associated Press |date=1999-04-14 |accessdate=2007-10-27] Usage of microwaves in sandwich preparation is limited to maintaining sandwich heat and not used to cook the product, except for the BK Veggie.

BK prepares its salads in store daily, as well as cookies and biscuits. Most of its biscuits are pre-made and frozen while some US stores do prepare them fresh.

Dietary concerns

In response to recent trends in obesity in the US and other nations, BK has begun to modify its menu and practices in regards to its food preparation and product offerings. In addition to offering lower fat menu item such as salads, BK has recently modified its nutrition guides to include dietary guidelines and other nutritional data. Unlike McDonald's in the US, BK does not print nutritional data on its product packaging.

* BK has several vegetarian options, including salads and vegetarian burgers, such as the BK Veggie Burger sandwich, and its Spicy Bean Burger sandwich.cite web |url=http://www.bk.com/Nutrition/PDFs/brochure.pdf |title=Burger King US Nutritional Brochure |author=BKC publication |publisher=Burger King Holdings |date=October 2007 |accessdate=2004-10-27 |format=PDF] The majority of these products do not qualify as vegan due to the presence of egg or dairy products. However, the BK Veggie Burger is approved by the British Vegetarian Society, which does not require their approved vegetarian products to be vegan, and allows ovo-lacto-vegetarian ingredients. [cite web |url=http://www.seedlingshowcase.com/corporate/product.asp?id=42981 |title=Approved products list - BK Veggie Burger |author=Vegetarian Society |accessdate=2008-08-16] The Veggie Burger is also widely sold in other countries, sometimes under different names (e.g. as "Country Burger" in Germany). It is often not prominently advertised, but available in most outlets upon request, even when BK's other vegetarian burgers are not available. The Veggie Burger patty is not fried together with non-vegetarian patties; it is microwaved instead. This often results in a slightly longer preparation time compared to BK's other burgers.
* In the US, BK will prepare many of its products in accordance with low-carb diets, such as the Atkins Nutritional Approach (Atkins Diet) or the South Beach Diet. [cite news |title=Fast food burgers roll with low-carb craze. |url=http://www.cnn.com/2004/HEALTH/diet.fitness/01/15/bunless.burgers.ap |publisher=Associated Press |date=2004-02-18 |accessdate=2007-08-21] This done by eliminating bread and certain condiments, such as ketchup, during preparation and serving the product as a salad. * Beginning in January 2008, Burger King began to phase out trans fat from its products. Initially starting by eliminating the trans fats introduced in the manufacture its products, it began using trans fat free oils in its cooking in the US and Canada in August 2008. Some products still contain trans-fats and will continue to do so through the end of October 2008. * BK food is prepared with several known food allergens, including wheat, milk, soy and eggs.

* In response to the increase in childhood obesity in Western nations, BK has begun phasing in broiled Chicken Tenders, Kraft Macaroni and Cheese, and apple "fries", french cut apples served in a fry box that will be featured in a new low fat Kid's Club Meal. [cite web |url=http://www.usatoday.com/money/industries/food/2007-09-11-healthy-meals_N.htm |title=Burger King has a new twist on fries: Fresh Apples. |author=Bruce Horovitz |publisher=USA Today |date=2007-09-21 |accessdate=2007-09-21] [cite web |url=http://www.usatoday.com/money/industries/food/2007-09-12-burger-king-health_N.htm |title=Burger King to sell broiled chicken in healthier kid menu |author=Adrian Sainz |publisher=USA Today |date=2007-09-12 |accessdate=2007-09-12] According to a statement by BKC the new Kid's Club meals will contain no more than 560 calories per meal, less than 30 percent of calories from fat, less than 10 percent of calories from saturated fat, no added trans fats and no more than 10 percent of calories from added sugars. Menu demographic targeting

;Value

BK targets value oriented customers with its BK Value Menu. In the US, this menu contains products that are usually priced in the $1.00 to $1.49 range. In non-U.S. markets, the BK Value Menu typically takes on a different name with prices set to reflect the approximate value of one US dollar. The naming of the value menu will vary for each market, examples include the 99ers menu that features items for sale at 0.99€ (Germany), the Wrap and Snack menu (Italy) and King D€als Menu that features items for sale at 1.00€ (Netherlands). Regardless of which market, the value menu usually includes smaller sandwiches and entrées, small sized side orders, small sized drinks and desserts. In the US, the value menu now has a breakfast offering, again in the same format as the lunch/dinner value menu. [cite web |url=http://consumerist.com/consumer/burger-king/burger-king-breakfast-value-menu-starts-monday-237396.php |title=Burger King Breakfast Value Menu Starts Monday |author=Meghann Marco |publisher=The Consumerist |date=2007-02-16 |accessdate=2007-10-27]

;ChildrenAs with all major fast food vendors, BK has a menu that specifically targets children. In the US they are called the Kids Club Meal and they compete with the popular Happy Meal from McDonald's and the Kid's Meal from Wendy's. The meal includes an entrée, a side order, beverage and a toy. The toy is usually a product tie-in with a movie or popular television show. The entrée and side offerings differs from market to market, as will portion size.

In the North American Market, BK further divides its children's menu in to three segments: toddler, kids and pre-teen. The only difference between the first two groups is the prize offering, the toddler will receive an age appropriate toy. The pre-teen offering includes a larger entrée and beverage and is called the "Big Kids Meal".

;AdultTo appeal to the adult market, BK offers several sandwiches and other products made with higher quality ingredients such as whole breast chicken fillets, Angus beef, cheddar cheese, honey mustard and hot sauces. These sandwiches are usually served on a better quality roll, such as baguettes or corn dusted potato rolls. Additionally, BK targets sub-groups within the adult market with products like the BK Stacker and BK XXL lines at late teen to young adult males or health conscious individuals with products such as salads, grilled chicken and veggie burgers. In international markets, the health conscious menu is sold under the LA Range or the King Delight names. ;the "Superfan"One particular market target of importance to the company is identified as the "Superfan". The super-fan is a demographic group that includes individuals that are 18 to 49 years old, visit a fast food restaurant five times a month and eat fast food 16 times a month. Burger King, and other vendors, hope to attract this group because of the large sums of money that they represent, thus increase sales and drive an increase in global sales. Products

The range of products sold usually depends on the time of day. Lunch items such as hamburgers and fries are traditionally not served during breakfast time, however some BK stores do sell food under their "Burgers for Breakfast" program. [cite web |url=http://interactive.wsj.com/articles/SB999536915882749423.htm |title=Burger King Brings in Business By Offering Burgers for Breakfast |author=Devon Spurgeon |publisher=Wall Street Journal |date=2000-09-04 |accessdate=2007-09-21] Breakfast operational hours vary but are usually from store open (and anywhere from 2:00 to 4:00 am in 24-hour stores) to 10:30 am on weekdays or 11:00 am on weekends. In some 24-hour restaurants, such as airports and service plazas, many items are already available for immediate take away. Breakfast items are not served at any time except breakfast, but there are some exceptions; the new Cheesy Tots and are always available upon request at most US BK restaurants. Food prices vary by region and country. [cite web |url=http://www.drivethrumenu.com/burgerking/ |title=Burger King's menu with prices in USD |accessdate=2006-08-13]

Product packaging

Burger King's product packaging has undergone many changes over the years. Originally the larger sandwiches were sold in a clamshell style box made of Styrofoam, but with environmental concerns over Styrofoam in 1982, the packaging was changed to a paperboard box. To cut back on the amount of paper that the company used, the paperboard box was fully eliminated in 1988 and was replaced with waxed paper. Smaller sandwiches, e.g. hamburgers, were originally served in small paper bags through 1979 when BK began wrapping its smaller sandwiches in waxed paper. Paperboard boxes are still used for its "finger food" products like Chicken Tenders and Fries, French toast sticks and desserts.

For a short time after BK began moving to a fresh made model where certain sandwiches are made only after being ordered instead of being pre-made ahead of time, BK used an aluminum foil wrapping for its Whopper sandwich that is similar to Wendy's North American sandwich packaging.

Starting in 2006 with the BK Chicken Fries product, BK began adapting some of its product packaging so that it could be placed in an automotive cup holder. The BK Chicken Fry box, while square in shape, will sit comfortably in the cup holder and its top, when opened, forms a small tray that is designed to hold dipping sauce. Burger King accredits the design of this box with helping to make its Chicken Fries the most popular adult-oriented chicken product in the US. [cite web |url=http://knowledge.emory.edu/article.cfm?articleid=1097 |title=Burger King CEO John Chidsey on Innovation, Trust, and "The King" |author=Knowledge@Emory |publisher=Emory University |date=2007-11-27 |accessdate=2008-03-01 |quote=Burger King came out with the "BK Chicken Fries" and put them in a fry pod carton. The result? The company sells more servings per day than either McDonald's or Wendy's.] It has since added a trademarked and patented round french fry container which it calls the "FryPod", an obvious play on the Apple iPod name. Additionally, BK's large and King sized beverage containers are made from molded HDPE plastic with a funnel-like shaped bottom that allows the over sized cups to fit in the smaller sized cup holders.

Iconography

Unlike other fast food vendor that tag their products with a slip of paper (McDonald's) or do not mark their sandwiches at all (Wendy's), Burger King uses a series of icons on its packaging to help identify its products.

Additionally, BK employs a system of characters to denote how the ingredients have been modified:

Burgers

* Burger King's trademark product is a hamburger called the Whopper. The Whopper is also a line of sandwiches all made with the same ingredients. The regular Whopper has a convert|4|oz|g burger patty, mayonnaise, lettuce, tomato, ketchup, onion and pickle on a sesame seed roll. It is available in all markets.

* The Angus Burger is a larger burger made with Angus beef. It is served with mayonnaise, lettuce, tomato, onion and steak sauce on a corn-dusted bun. It is available in the North American, British, Irish, Swedish and Spanish markets. It is one of their larger, adult oriented sandwiches made with higher quality ingredients than their "standard" menu items.

The sandwich was reintroduced in a slightly different format called Burger Buddies. Instead of three or six miniature hamburger patties, it had a single number eight shaped patty that was served on a pair of co-joined buns. The sandwich was sold for 99¢ and was designed to be torn into two smaller sandwiches. There was a breakfast version of the Burger Buddies called the Breakfast Buddies that had eggs, cheese and a sausage patty, again for 99¢. Purchasing guidelines for meat

Like many of its competitors, BK has been targeted by various animal welfare groups, such as PETA, over the treatment of the animals it uses in manufacture of its ingredients. In a concession to these groups, BK adopted a series of policies for its suppliers for several of its raw animal products, e.g., establishing a preference for eggs and pork-based products from those suppliers that use cage-free production methods.
