Sambousa

Sambousa

Sambousa is an Arabic, Turkish, and Somali pastry, similar to a turnover or spring roll made with ground beef (though ground lamb may be substituted) and spices and vegetables such as carrots, onions, garlic, tomato paste, and even diced chile peppers. In northern Africa, for example, it is folded into a triangular shape and often displayed in open air markets in large display bowls or mats.

It can be eaten with Hummus as part of the "mezza", or appetizer spread before a meal. The same food item in south Asian subcontinent is popularly known as "samosa" and is generally triangular shaped fried packet of thin crispy layer of dough, filled with potatoes, beans, peas or other vegetables or ground meat or chicken.
